Chia originated in the mountainous areas of Mexico and is believed to exist 3,500 years BC and was known as an important food-medicine. In pre-Columbian times, it was the Mayans and Aztecs one of four basic crops for food. It has also been grown for centuries in South America. Today, Chia seed is recognized as a rich source of Omega 3 fatty acids, fiber which benefits help digestion and healthy cardiovascular function.
1 cup of water (preferably hot), 1 Tbsp. Chia seeds, 2 or 3 Tbsp. lemon or lime, 1 Tbsp. honey or agave. Mix ingredients and stir well. Let stand for 20 to 30 minutes or until the Chia Seeds have softened and a thin gelatin texture is formed. Chia also can be added to smoothies, salads, yogurt, breakfast cereals, etc.
